Ingredients
Quick Lemony Italian Dressing
1/2cupolive oilextra virgin
1/4cuplemon juicefresh
1/4cupred wine vinegar
1teaspoonDijon mustard
1teaspoondried oregano leaves
1/4teaspoonsea salt
1/4teaspoonblack pepper
For the salad
1/4cupred onionsthinly sliced
2cupsbaby kale, arugula, or other leafy green
2ouncessalamichopped
2ouncesturkeychopped
2ounceshamchopped
1/2ouncegouda or parmesean cheeseshaved
1/4cuppepperoncinichopped
1pinchoreganoas garnish
1pinchblack pepperas garnish
Instructions
Whisk or blend together all dressing ingredients.
Place the sliced onions into a small, flat dish and pour 2 to 3 tablespoons of the dressing over them to allow them to quickly marinate while you make the salad.
Assemble the rest of the salad, then pour the onions and dressing over the top - enjoy!
