I slow cooked chicken breast in water and then shredded it with forks (I do this on the regular to have prepped go-to protein). 🍗 I put one breast in a bowl and added a spoonful of @primalkitchenfoods mayo, about 1/3c Greek yogurt, a squeeze of mustard, the juice of half a lemon, about a quarter of an apple (diced), half an onion (diced), a dash of finely chopped fresh cilantro, @dianesanfilippo's Mega Med spice blend, and all the s&p. I piled it onto whatever greenery I had in the fridge, hit it with a little balsamic and bam💥! . A super protein dense, super easy, extra yummy lunch that took about 3 minutes to throw together. It might not be the most “instagrammable” bowl of grub, but this is pretty much how I eat on the regular.💁🏼

CHORIZO // If you can find a clean option like this (mine is from my local farmers market and has no funky stuff in it!), use that. Otherwise, I've got a CHORIZO spice blend in #PracticalPaleo 1st & 2nd edition. Ideally it's made with pork but use any ground protein you like. . I topped some @sietefoods coconut cassava tortillas (warmed in a skillet) with chorizo, avocado, red onion, green onion, cilantro, goat cheese, and @Tabasco green hot sauce. .
