“Beyond Bacon” – a video and a giveaway!

beyondBaconCoverLeave it to me to get an amazing book all about how to respect the “whole hog” and then to attempt to bake – not to cook a tasty pork chop or other cut of the pig. The thing is, I didn't have any pork in my house when the book arrived. And I really wanted to make the biscotti recipe.

Scratch that. I really wanted my dad to make the biscotti recipe. After all, he was The Biscotti King for at least a decade in the Sanfilippo house – but that's back when we all ate gluten. Fast forward many years and there's been no biscotti to speak of, a very sad state indeed. But, it turns out that my (retired, mind you) dad actually had a lot to do this past weekend.

So I was left to my own devices to make this recipe: Salted Mocha Biscotti.

I just don’t know what to DO with meat of any kind (minus using a crockpot). Baking comes naturally, so of course I’m dying to try Paleo Parent’s lard-a-liscious treats. But I think having a full on hog recipe manifest will up my game in the kitchen. Also: I’d like to stare longingly at those glossy pages/photos for days on end.

  15. I just got myself a new chest freezer so I could have room to store a large quantity of food. I love the idea of having a book that can help me utilize an entire animal. I’ve not cooked much with pork (other than some ground pork and, of course, BACON!). So, having a guide to know what to do with all the parts makes me want to fill up that new freezer with a hog.

  48. The first thing I noticed about this book is it’s beautiful design. Like Practical Paleo, you can tell some real thought was put into the design. Good design makes everything better. You know what else makes everything better? Pork products! I can’t wait to get my hands on this book to get some fresh new pork recipes!

But a friend of mine came to my rescue many many years ago after I had made and I (felt) I had followed the recipe religiously for my then fiancé (but got dumped) (yeah it’s a good good thing) Mom’s favorite snicker doodle recipe which kept melting completely and pouring of my cookie sheets down onto the oven floor burning ack! My friend who had wicked baking skills came over and we made it together… and just whenhought we were done according to the printed recipe (I bought the same cookbook and everything of course a more recent version!) so my friend asked me when do put in the rest of the flour? What rest? We put in the 1/2 cup that it called for?… She said ohhhh helllll noooo it will melt all over your oven! I cried!!!!ay I am not the most inept baker in the world! We called up his mom and checked the ingriedient list from her version of the cookbook it called for 3 1/2 cups of flour but in my book in print it only said 1/2 cup she too agreed what a mess it would make and then I confessed all I had done all day was make the mess and clean the oven and had spent $50-60.00 (back in the early 80’s) and we laughed and laughed! I wrote the publisher about the misprint….never heard back! So just say’in it’s not always you the baker! It can be a misprint or crap recipe that got changed without the author knowing it! Hahahaa! Hope I made you feel better! I would love to win the book!

  62. YEAH!!! I actually rendered all my own lard last year. Let me just say it was a tiring task, but the results were well worth the effort!!!

Pork and chicken are the only meats my husband and I can agree on (he won’t eat fish or beef), also he is pretty resistant to eating paleo, unless I cook the meal (he refuses to give up sandwiches). We used to cook together often but haven’t in a long time. I think this book would encourage us getting back into the kitchen and maybe show him how awesome paleo can be.

  64. I’m SO excited for this book. I grew up eating only chicken, turkey and fish (no red meat ever)…went vegan at 13 and shifted between vegetarian, vegan, and raw for the next 10 years. Once finding the paleo way eating all this new food (ahem, meat) has been a bit daunting! A lot of the options I’ve explored have centered around reducing food costs, and I’m really interested in buying part of a cow or pig. This cookbook would be an awesome kickstart to that whole process!

  76. I’m learning to butcher my own pastured half hog next week and once my freezer is full of all the bits, I will need help preparing rendered lard and what-not in real recipes… it’s too dangerous to just wing it.

  77. I plan on going to a class (actually in New Jersey) that teaches you to slaughter, butcher and use the entire pig. And at the end of the class (an entire weekend) you take home a pig to do it again! Could use many cookbooks for this!

    I would love to use this book to get over my “pork anxiety” (as in not knowing how to cook it, not knowing which are the best parts for a given purpose, etc.). I’ve made perfectly baked bacon, and did a pork chop in my slow cooker, but that’s the extent of it! I need to do some learning!

Using more of an animal would be a way of showing true appreciation for the gifts that animal has given. I’d love to have some recipes for some of the “odds and ends,” like ears and tails, as well as some new ideas on how to prepare already great cuts like the shoulder and belly.

  113. I have always considered pork to be the most delicious tasting meat. I only occasionally eat meat anymore, and very infrequently eat pork. My philosophy of eating healthy is to eat mostly plants most of the time, and only a little meat or dairy. Like someone (I think George Washington) said, meat should be a condiment. Nevertheless, when I do cook pork, I want it to taste wonderful so I enjoy the experience. I look forward to help from your book in this endeavor.

  115. I’m new to paleo and, actually, to pork! Other than frying bacon (which doesn’t really turn out right!), I have no clue what to do with it! My boyfriend really likes pork chops, but I’m nervous to make them — this book will be a huge help. Also, I love the cover design, it looks great. I hate when paleo cookbooks look sad in comparison to “regular” cookbooks.

  116. Oh My Stars! I can’t wait to get my copy of Beyond Bacon. I started with Paleo on January 1st and have lost 35lbs. Life is good… Now my friends and family will not believe that I eat bacon and pork and are convinced that I’m not being honest. With this book I could have some amazing get to together s and picnics and “WOW” the socks off them. Oh My Stars… I can almost taste it now!

    p.s. if they don’t come I’ll be in pork heaven anyway:)

  118. I would love Beyond Bacon just for that reason! I want to get beyond the bacon. I need to learn more ways to love to eat pork than just eating the bacon. Although the bacon is awesome! From what I can tell, this book is more than just a cookbook. It is a beautiful, informative guide about a delicious creature!

  119. Right now, bacon is pretty much the only pork we eat — we’ve got a ton of great tenderloin recipes, but they’ve started to become “same old, same old”. I have no idea what to do with other cuts and would love to be enlightened!

  120. I’m on day 7 of the 30-day Paleo Challenge. Before even trying Paleo, I was transitioning into “straight-from-the-farmer” food. We bought our first half a hog this Spring. I’ve read about how to render the fat, but I’m still trying to figure out what to do with some of the other cuts. I’ll be buying this book if I don’t win the drawing, but it would sure be nice to save that cash and put it toward three dozen more eggs!
